Green Tomato Relish
Ingredients
- 2 1/2 pounds green tomatoes, diced
- 1 large green bell pepper, seeded & diced
- 2 large red bell peppers, seeded and diced
- 1/2 bunch celery, diced evenly
- 1 tablespoon mustard seed
- 1 1/2 cups apple cider vinegar
- 1 1/2 cups sugar
- 1 tablespoon kosher salt
Instructions
Combine all ingredients in a non-reactive saucepan. Bring to a simmer, stirring occasionally until sugar has dissolved. Continue to cook until thickened, about 1 1/2 - 2 hours. Chill, and it’s ready to be used alongside any delicious southern meal!
Basic Quick Pickling
Ingredients
- 1 gallon white vinegar
- 3 quarts water
- 2 tablespoons whole all-spice
- 2 tablespoons whole cloves
- 1 cup sugar
- 2 tablespoons mustard seeds
- 1/4 cup kosher salt
- 1/4 cup tumeric
Instructions
Combine all ingredients in a non-reactive saucepan, and bring to a boil, stirring to dissolve the salt & sugar. Simmer for 10 minutes. Allow to cool until warm, and pour through a mesh strainer. Ready to use over your favorite vegetables or fruit. Refrigerate.
Cooking Measurements
1 cup = 250 ml = 16 Tablespoons
1/2 cup = 125 ml = 8 Tablespoons
1/3 cup = 83 ml = 5.3 Tablespoons
1/4 cup = 62 ml = 4 Tablespoons
1 Pinch = 1/8 Teaspoon
